Soups and creams for Winter - Sopas y cremas para el invierno



You cannot imagine 
how a simple cream can change
 with a few pistachios 
and a bit of bacon
No os podéis imaginar 
como puede cambiar 
una simple crema
con unos pocos pistachos
y un poco de bacon

PUMPKIN CREAM - CREMA DE CALABAZA

1 kg pumpkin - 1 kg de calabaza
1 big onion - 1 cebolla grande
milk or cream - leche o nata
salt and pepper -  sal y pimienta
olive oil - aceite de oliva
pistachios and bacon - pistachos y bacon


Cook pumpkin in water until tender,
saute the onion cut into small pieces 
till it is  golden in olive oil, add the pumpkin and saute a little bit, 
then add salt and pepper, milk or cream 
(depending on if you want more or less liquid the cream)  and 
crush in the mixer.
Cut and saute a bit of bacon and add over the cream. Cut a few pistachos in small pieces and add also.

Cocer la calabaza en agua hasta que esté tierna, rehogar la cebolla cortada en trozos pequeños hasta que se dore en aceite de oliva, añadir la calabaza y rehogar un poquito, 
a continuación añadir sal y pimienta, leche o nata (dependiendo de si queréis la crema más o menos liquida) y triturar en la batidora.
Cortar y rehogar un poco de bacon y añadir sobre la crema. Cortar en trocitos unos pocos pistachos y añadir también

    You are quite a great cook! Lovely idea for adding pistachio nuts and bacon (even the fakin-bacon made from soy as healthy alternative) to those cream soups. This is perfect fare for autumn days and with some rye bread or multi grain bread creates a healthy meal!

  6. It sounds delicious and interesting with the nuts. I make a pumpkin soup with chipolte and since pistachios grow around here, maybe I should chop some up to garnish the top. I think the two flavors would work together. Thank you for the recipe and inspiration!
